Koroke! Making them is really easy. Basically you mash up some boiled or steamed potatoes with a little water and maybe some softened onion. Form them into little patties, coat with flour, dip in lightly beaten egg, and coat with panko. Then you deep fry it until it's golden brown and serve with ketchup or mayo or just eat them plain. The one in John's photo looks like it's topped with mayo.
